The Master Chef Onishi Yuki opened Japanese Soba Noodles Tsuta in Sugamo, Tokyo in January 2012. The name is originated from his thought, “Ramen is the noodles of which Japan can boast to the world.” Received a great number of prizes from the journalsz for ramen lovers since 2012, it was granted as One Michelin-Starred in 2015 before other ramen restaurants around the world. The truffle oil blended Shoyu Soba (soy-based sauce flavoured ramen) is the signature.


Chef-owner Chan Hong Meng first learned the basics of this Cantonese chicken recipe in 1989 while working under a chef from Hong Kong. “I found that this dish, out of so many dishes we were making, had real potential,” he tells people. “I liked the way it was cooked. But now it’s a little different than how I learned it because I’ve added extra ingredients.”
